Paleo Pancakes


  • 1 cup almond flour/meal 
  • 1/4 tsp baking soda 
  • ½ tsp cream of tartar
  • 2 eggs
  • 1/4 cup water (for puffier pancakes, you can use sparkling water )
  • 1/4 teaspoon salt

Chocolate Flour-less Torte



Ingredients
18 ounces Bittersweet Chocolate (I used Ghirardelli Bittersweet Chocolate Chips)
1 cup Coconut Oil
3/4 cup Maple Syrup
2 Tablespoons Water
1/4 teaspoon Salt
6 Eggs
 
Melt the chocolate and coconut oil in a double boiler. Let melt slowly and stir constantly to avoid burning the chocolate. Remove from heat when the chocolate is just fully melted. Beat in the maple syrup, water and salt. Beat in the eggs, one by one, until completely incorporated into the mixture. I used the electric whisk attachment for my hand blender.
 
Grease a 9″ springform pan and dust it with cocoa powder. Surround the base of the pan (on the outside) with foil. Pour the cake batter into the pan. Cook in a water bath reaching halfway up the side of the cake.
 
Bake at 275 for 50 minutes. Cake should be set, but still look a little shiny and wet in the middle when done.
 
Let cool at room temperature for about an hour, then refrigerate 5 hours before removing pan siding and serving. Cut with a clean, warm knife (run the knife under hot water and dry between slices).
 
Get creative- add walnut pieces or an almond butter squirl before baking. Serve with fresh raspberries and garnish with a fresh mint leaf.

Deviled Eggs

My wife Robin whipped this up this morning.  This isn't your normal deviled eggs.  I ate them all before I could get a picture.  Enjoy!


Ingredients:
  • 3 hard boiled eggs (boil 10 min.s)
  • ½ avocado
  • Olive oil
  • ½ Tablespoon of Herdez salsa
  • Salt and pepper to taste


Directions:
  1. Remove shell and cut in half. 
  2. Scoop out hard yolk into bowl and add next four ingredients.
  3. Can also add extra Jalapeño, fresh cilantro for a little extra touch.

Bacon Wrapped Sweet Potato


This is a great side dish for breakfast. Enjoy!


Ingredients

  • 1-2 long sweet potatoes
  • Half pound bacon sliced in half


Directions

  1. Rinse sweet potatoes, poke holes all the way round, wrap in paper towel or wax paper and microwave about 8 minutes until tender but not mushy.
  2. Heat large frying pan to medium.
  3. Cut the sweet potato into one inch pucks
  4. Wrap each in a half slice of bacon so the overlap on one side.
  5. Set in pan where the bacon overlap and fry about 4-5 minutes.
  6. Flip and fry until finished.

Huevos Rancheros



This is my personal all time favorite.  My wife and I agree this would be on our brunch menu in the restaurant we always dream about opening. I hope you enjoy.


Ingredients:

  • Olive Oil
  • 1/2 sweet onion diced
  • 1/2 green pepper diced
  • 2-3 cloves of garlic chopped
  • 2 - 14 oz cans of petite diced tomatoes
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp cumin
  • salt and pepper to taste
  • Eggs
  • Avacado


Directions:

  1. Heat olive oil and saute onions, pepper and garlic till onions are translucent.
  2. Toss in tomatoes, oregano, thyme, cumin, salt and pepper.
  3. Bring to a boil and reduce to simmer for 20 minutes.
  4. Bring heat to medium.
  5. Create 4-5 holes in the sauce and break eggs into into holes.
  6. Cover and cook eggs as desired.
  7. Dish out eggs and sauce and top with cubed avocado.


Time: 30 minutes
Servings: 2-3

Salsa Verde

Ingredients

  • 5 chopped peeled tomatillos
  • 1 avacado, seeded and peeled
  • 1 cup cilantro leaves, snipped
  • 1 jalapeño pepper, seeded
  • 1/2 cup water
  • 1/3 cup lime juice
  • 1/4 salt
Directions
  1. Toss tomatillos, avacado, cilantro and jalapeño in food processor and pulse till finely chopped.
  2. Stir in water, lime juice and salt.
  3. Cover and chill for 2 hours to several days.
Great on just about anything! Eggs, Chicken, ...

Swiss Chard Recipe

Ingredients
1 large bunch of fresh Swiss chard
1 small clove garlic, sliced
2 Tbsp olive oil
2 Tbsp water
Pinch of dried crushed red pepper
1 teaspoon butter
Salt

Directions
  1. Rinse out the Swiss chard leaves thoroughly. Remove the toughest third of the stalk. Roughly chop the leaves into inch-wide strips.
  2. Heat a saucepan on a medium heat setting, add olive oil, a few small slices of garlic and the crushed red pepper. Sauté for about a minute. Add the chopped Swiss chard leaves and cook for 5 minutes. toss everything and cook for another 5 minutes.  Add salt to taste, and a small amount of clarified butter. 

Note: I tossed in some browned Italian turkey sausage balls made from links, black olives and cooked red bell pepper to make this a complete meal.

Bacon wrapped Asparagus

I think you could wrap almost anything in bacon and make it taste better but this is exceptions with a side of eggs.


Ingredients:

  • Asparagus (I like Costco's big bag)
  • 1 lb of bacon


Directions

  1. Heat oven to 375 F.
  2. Wrap each large asparagus with one slice of bacon or wrap 3-4 small ones with a piece.
  3. Place in a baking dish or high sided pan.
  4. Cook for about 15 minutes.


Poach some eggs or make fry some over easy and you've got some serious Breakfast awesomeness.

Sweet Potato Hash

Great side with morning eggs.

Ingredients:

  • 1/2 yellow sweet onion diced
  • 1/2 cup of frozen peppers or 1/2 bell pepper (color your choice) diced
  • 1 sweet potato
  • 2 Tbs Olive Oil 
  • Sea Salt and Pepper to taste


Directions:

  1. Heat oil in large saute pan at medium-high.
  2. Poke holes in sweet potato and microwave for 6 mins for small or 8 mins for large ones.  Should come out feeling somewhat soft.
  3. While this is in the microwave, toss your onions in the pan and saute till they are translucent.
  4. Then toss in the peppers to the mix and continue for another 5 minutes.
  5. While this is cooking the sweet potato should be about done. Pull it out and dice it up. I usually cut it down the middle and then into quarters to make 4 slices of potato. Peel off the skin and then dice.
  6. Toss this into the onion and pepper mix and cook to desired crunchy awesomeness.
Notes: 
  • You can crack some eggs in a pan around 4 and 5 and everything should be done about the same time.
  • Kick this up a notch by browning some Chorizio or Italian sausage and throwing it in at the end and mixing together real good.


Ate some while typing and totally forget to snap a picture.  Will get one next time since it's almost all gone!

Perfect Paleo Pizza Crust

This makes awesome pizza. This may not be 100% Paleo as it has milk based products. This is so close and good, just count as the cheat meal and toss the (insert cheat meal here) you were planning to eat.

Sauce: Easy

1 Can Tomato Paste
1-2 Cups Water (To desired thickness)
1 Tsp Dried Oregano
1 Tsp Garlic

1. In a saucepan, combine all ingredients. Use water to desired thickness. We like ours pretty thick. Feel free to add more spice if you want it, too.
2. Simmer on stove for approximately 15 minutes.

Over at This Primal Life, Shelley whipped up a really good pizza crust recipe. All I'm going to say is four ingredients. I don't have permission to repost and since it's so good, I'm just going to link to it for now.
