Sweet Potato Hash

Great side with morning eggs.

Ingredients:

  • 1/2 yellow sweet onion diced
  • 1/2 cup of frozen peppers or 1/2 bell pepper (color your choice) diced
  • 1 sweet potato
  • 2 Tbs Olive Oil 
  • Sea Salt and Pepper to taste


Directions:

  1. Heat oil in large saute pan at medium-high.
  2. Poke holes in sweet potato and microwave for 6 mins for small or 8 mins for large ones.  Should come out feeling somewhat soft.
  3. While this is in the microwave, toss your onions in the pan and saute till they are translucent.
  4. Then toss in the peppers to the mix and continue for another 5 minutes.
  5. While this is cooking the sweet potato should be about done. Pull it out and dice it up. I usually cut it down the middle and then into quarters to make 4 slices of potato. Peel off the skin and then dice.
  6. Toss this into the onion and pepper mix and cook to desired crunchy awesomeness.
Notes: 
  • You can crack some eggs in a pan around 4 and 5 and everything should be done about the same time.
  • Kick this up a notch by browning some Chorizio or Italian sausage and throwing it in at the end and mixing together real good.


Ate some while typing and totally forget to snap a picture.  Will get one next time since it's almost all gone!
