Ingredients
- 1-2 long sweet potatoes
- Half pound bacon sliced in half
Directions
- Rinse sweet potatoes, poke holes all the way round, wrap in paper towel or wax paper and microwave about 8 minutes until tender but not mushy.
- Heat large frying pan to medium.
- Cut the sweet potato into one inch pucks
- Wrap each in a half slice of bacon so the overlap on one side.
- Set in pan where the bacon overlap and fry about 4-5 minutes.
- Flip and fry until finished.
