Bacon Wrapped Sweet Potato


This is a great side dish for breakfast. Enjoy!


Ingredients

  • 1-2 long sweet potatoes
  • Half pound bacon sliced in half


Directions

  1. Rinse sweet potatoes, poke holes all the way round, wrap in paper towel or wax paper and microwave about 8 minutes until tender but not mushy.
  2. Heat large frying pan to medium.
  3. Cut the sweet potato into one inch pucks
  4. Wrap each in a half slice of bacon so the overlap on one side.
  5. Set in pan where the bacon overlap and fry about 4-5 minutes.
  6. Flip and fry until finished.
