This is my personal all time favorite. My wife and I agree this would be on our brunch menu in the restaurant we always dream about opening. I hope you enjoy.
Ingredients:
- Olive Oil
- 1/2 sweet onion diced
- 1/2 green pepper diced
- 2-3 cloves of garlic chopped
- 2 - 14 oz cans of petite diced tomatoes
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp cumin
- salt and pepper to taste
- Eggs
- Avacado
Directions:
- Heat olive oil and saute onions, pepper and garlic till onions are translucent.
- Toss in tomatoes, oregano, thyme, cumin, salt and pepper.
- Bring to a boil and reduce to simmer for 20 minutes.
- Bring heat to medium.
- Create 4-5 holes in the sauce and break eggs into into holes.
- Cover and cook eggs as desired.
- Dish out eggs and sauce and top with cubed avocado.
Time: 30 minutes
