Huevos Rancheros



This is my personal all time favorite.  My wife and I agree this would be on our brunch menu in the restaurant we always dream about opening. I hope you enjoy.


Ingredients:

  • Olive Oil
  • 1/2 sweet onion diced
  • 1/2 green pepper diced
  • 2-3 cloves of garlic chopped
  • 2 - 14 oz cans of petite diced tomatoes
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp cumin
  • salt and pepper to taste
  • Eggs
  • Avacado


Directions:

  1. Heat olive oil and saute onions, pepper and garlic till onions are translucent.
  2. Toss in tomatoes, oregano, thyme, cumin, salt and pepper.
  3. Bring to a boil and reduce to simmer for 20 minutes.
  4. Bring heat to medium.
  5. Create 4-5 holes in the sauce and break eggs into into holes.
  6. Cover and cook eggs as desired.
  7. Dish out eggs and sauce and top with cubed avocado.


Time: 30 minutes
Servings: 2-3
