Avacodo Salad

Great simple and fresh recipe that it great with eggs, chicken and cooked shrimp.

Ingredients
  • 25 oz jar of Heart of Palm diced in 1/2 inch pieces
  • 1/2 carton grape tomatoes halved 
  • 1/2 red onion
  • Lime juice from 2 fresh limes
  • Olive Oil
  • Salt and Pepper
  • Cumin to taste
  • 1/2 bunch cilantro leaves minded (no stems)
  • 2 Avocados cut into 1/2 inch cubes.
Directions
  • Mix all the ingredients together saving the avocado for last.
  • Gently fold in avocado. 
  • Chill in fridge for a couple of hours before serving.
